ANSC 7343 - Advanced Processed Meats (HAZ)

Prerequisite(s): Admission to M.S. program; Lab Safety Training required. Advanced application of processed meats production. Lab safety training required. Advanced processed meats manufacture, ingredient selection, curing, injecting, marination, smoking, and all other associated principles. Students will develop an advanced level of processed meats manufacturing knowledge, be able to diagnose problems, generate solutions, and create diverse processed products.
