ANSC 4317 - Processed Meats Production & Technology (HAZ) 3 2 2 Prerequisite(s): AGRI 1329 or consent of instructor; Lab Safety Training required. Co-requisite: ANSC 4317L. Principles of processed meat production and technology. Basic processed meats manufacture, ingredient selection, curing, injecting, marination, smoking, and all other associated principles. Students will develop a greater understanding of how processed meat products are made and the materials required to produce them. Lab fee $15.
